Today, Corinna is going to show you how to make cheesecake. Although, cheesecake is traditionally associated to countries like the United Kingdom and North America, in reality its origin goes back to the ancient Greece. It was then adopted by the Romans and many other civilizations that followed. That’s why our recipe has Greek yogurt as one of its main ingredients. As this is the Italian version of this exquisite dessert, the other essential ingredient in our version is ricotta cheese. The result is the same: easy peasy to make and delicious to the palate. Enjoy it!
INGREDIENTS
For the cheesecake
350gr of ricotta
200gr of Greek yogurt
100gr of fresh cream
150 gr of sugar
180gr of dry biscuits
80gr of softened butter
3 eggs
40gr of lemon juice
The zest of 1 lemon
For the topping
400gr of fresh strawberries
40gr of lemon juice
100gr of sugar
1 gelatin sachet or 2 gelatin sheets
PREPARATION
Grind the biscuits and mix them with butter. Lay the mix at the bottom of a baking tray, by compacting it with a spoon. Place in the freezer for 20 minutes.
Put the ricotta, Greek yogurt and fresh cream in a large bowl and mix them together. Add the sugar, the lemon zest and the lemon juice. Add the eggs, one at a time and mix them in. Pour the mix over the biscuit base, into the baking tray.
Bake for 40 minutes at 180C (360F).
For the topping, blend the strawberries and then cook them with sugar, lemon juice and gelatin. Let the mix cook for a while. Pour it over the cheesecake and let it rest in the fridge for at least 3 hours.
Serve cool.
