Followed by this amazing and vibrant tomato sauce. I try to always use San Marzano tomatoes whenever I can. Actually, if I cannot find any, I usually don’t make pasta. That’s how much I love these tomatoes!

Dough Recipe: (makes 4 servings)
6 egg yolks
1 whole egg
8 oz or 1 3/4 C AP flour
1 tbsp milk
1.5 tsp olive oil
Garlic and basil oil: (base for Pomodoro sauce)
1/4 C olive oil
3 cloves garlic, sliced thin as possible
3 stalks of basil
Pomodoro Sauce: (2 servings)
1/4 C garlic and basil oil
1 C San Marzano tomatoes (I ran mine through a food mill)
salt to taste
2 tbsp butter
*optional 1 tsp chili flakes
6 basil leaves chiffonade or sliced into thin ribbons
1/3 C grated parmesan cheese (for the sauce)
2 tbsp grated parmesan for garnish
a few small basil leaves for garnish
