LOL – I spelled Parmesan wrong in my video – whoops – It happens –
In this video I am making Italian Parmesan Fried Chicken from my meal prep company that I use call Home Chef. They are really great. I usually use Hello Fresh but I thought I needed a change so this week I got my shipment of Home Chef and I really like it alot.

This recipe is pretty simple:
I preheat the oven to 425 then fill a medium pot with water and boil.

While the water is heating up I start to cut all the veggies.
I start with cutting up the sweet potatoes, peel them and cut them into chunks so they will cook faster and mash easier.

As they are were boiling I cut the green onions and the zucchini and put the zucchini on a cookie sheet with some olive oil and some of the green onions sprinkled on them and put them in the oven to roast with a little bit of salt and pepper.

While the zucchini was roasting, and the sweet potatoes were still boiling I prepared a little mix of parmasean and the rest of the green onions in a little bowl and set it aside.

Then I took another bowl and filled it with some sour cream and a little water and another little bowl with some flour and prepared the chicken for it’s bath in oil…. I KNOW…. Not the healthiest but YUMMMM.

I took a frying pan, added some oilve oil and waited a minute or so until the oil was nice and hot and then dipped the chicken into the sour cream first, then into the flour and then put them into the pan to sizzle away in the juices to get nice and crunchy and of course oily and juicy.

When it was done I put it onto a plate that I lined with a paper towel and took the parmasean mix with green onions that I set aside and sprinkled it on top of the wet, hot, juicy chicken and let it rest while I finished the potatoes.

I drained the potatoes, then added the brown sugar, sour cream and the butter, mashed it but keeping it sort of chunky ( like me lol) took out the roasted zucchini from the oven and plated the goodness and served…

YUMM Dinner was amazing – fattening but great oh…. And my kid LOVED IT!
He’s 13 and that’s not an easy task.
