I present a very simple and tasty Vegan Recipe, with fresh and tasty ingredients: Marinated Grilled Eggplants.
Here are the ingredients to prepare Grilled Eggplants for 3 people
2 large Eggplants
Salt
Extra virgin olive oil
2 cloves of Garlic
Parsley
1- Start by washing the eggplants well under running water, then you can start cutting them into slices of about 3 – 4 millimeters.
2- Peel the two cloves of garlic and finely slice them too, finally chop the parsley.
3- Put a grill pan over high heat on the stove and start grilling and dehydrating the eggplant slices in the boiling pan.
Once all the aubergine slices are grilled we can start with the dressing.
Put a layer of aubergine slices on a plate with high edges and add salt, a few flakes of garlic, extra virgin olive oil, wine or apple vinegar and finally parsley.
Make many layers until you finish all the slices following with the same seasoning for each layer.
You can taste your grilled Eggplants immediately or let them rest for a few hours, the next day they will be even tastier and you can keep them in the refrigerator for a week.
I always eat them with bruschetta, breadsticks, pizza or bread, they are delicious!!!
