In this video my kids and I will be preparing ñoquis (gnocchi) con estofado de carne. We start the sauce with a traditional tuco style preparation and add red wine to braise the beef. An Argentine gem.

Ñoquis (gnocchi) are traditionally prepared in a household once a month, “Dia de Ñoquis”. Every 29th of the month they are prepared and eaten for good luck. Legend has it that the Italian laborers would be paid every 1st of the month, so at the end of the month money would be tight and potatoes and flour were inexpensive.

Argentina has a strong Italian influence throughout the country due to Italian immigration between 1857 to 1940. An estimated 62.5% of the total Argentine populations some degree of Italian ancestry.
