Ingredients
Pancetta 1/2 lbs 227g
Garlic 4 cloves
EVOO 3 tbsp 45mL
White wine 1/4 cup 60mL
Eggs 2 lrg
Romano 1/4 cup
Parmigiano-reggiano 1/2 cup
Black pepper To taste
Chopped parsley 2 tbsp
Crushed red pepper To taste
Spaghetti(dry) 1 1/4 lbs 567g
Add Evoo to medium heat in medium sauté pan add chop pancetta, render and crisp. After that add thinly sliced garlic cook until almost golden then add pepper and crushed red peppers. Add white wine and cook off alcohol.
Beat eggs in separate bowl.
Cook Noods reserving 6oz liquid
temper eggs with hot nood liquid then add pancetta wine mixture.
Add noods, cheese, Parsley and toss
Plate and serve.
