This an unique type of stuffed pasta, a version of culurgiones Pasta, similar to dumplings traditionally stuffed with creamy potatoes filling, flavoured with pepper tomato sauce.
This recipe included the below steps :
1. Filling preparation (potatoes, ginger, chilli, cheese, salt)
2. Pasta Preparation
Pasta dough
Ingredients for Pasta dough
Semolina(thick or thin both are fine)
Spinach puree
Sea salt
Combine all to make dough
#Tip 1: If your semolina is thin ,it will absorb water faster,if it is thick it will take little more time to absorb water than thin one.
#Tip 2: Though semolina absorbs water ,so we have to add little more water(I have used Spinach puree) ,so that the final dough will be like Chapati dough.
3.Dumplings
To make dumplings ,we have to roll a small portion of dough like a normal roti/ Chapathi(about 1mm thickness).Then cut out some circles (3-4 cm) and put the potato filling in the centre and seal.
Then cook them in rolling boil water for 2-3 minutes uncovered, or until your dumplings floats in water.
4.Sauce Preparation (tomatoes, garlic,onions, pepper, Italian mixed herbs)
5.Add cooked dumplings to the prepared sauce and add cheese
6.serve hot
