This authentic Italian Carbonara pasta recipe is for those who want to experience the REAL taste of Italy. With only 5 ingredients this pasta is super easy to make and incredibly delicious! A little bit of pancetta, lots of black pepper, egg yolks, Pecorino cheese. The best everyday food you can imagine! We’ll be following the traditional Italian recipe, but with a little American touch.

Ingredients (2 servings)
4 egg yolks
3,5 cups pasta (350g)
2 cups Pancetta and/or bacon (200g)
1 cup Parmesan or Pecorino cheese (100g)
Ground pepper
Pasta water

Directions
1. Mix 4 egg yolks, 1 cup Parmesan or Pecorino cheese (100g) and ground pepper
2. Chop 2 cups Pancetta and/or bacon (200g)
3. Cook on a medium heat for about 5 minutes until golden brown
4. Meanwhile cook pasta until al dente (just cooked)
5. Put pasta in the pan with the pancetta
6. Cook on a low heat for 2 minutes
7. (Important) Remove from heat
8. Quickly pour in the egg mixture
9. Add some pasta water
