Giulia Ruffoni shares her take on Italian Radicchio risotto and pairs it with Hestan Vineyards acclaimed 2015 Malbec – Ingredients below

As a fourth generation Ruffoni, Giulia is naturally passionate about cooking up a storm and gathering people around the dinner table. Risotto is her favorite dish and she believes making an authentic risotto from scratch is not only a great demonstration of copper’s superior performance, but also extremely easy and fun!

The beauty of risotto is that it can be flavoured with endless ingredients. For this live cooking, Giulia chose radicchio, a slightly bitter leafy vegetable that pairs perfectly with the fruit and character of Hestan’s stellar Malbec and balances the natural creaminess of risotto for a truly delectable dinner.

Ingredients for 2 people:
– 1 cup Carnaroli rice (or Arborio or Vialone Nano)
– 2 tbsp butter
– 3 tbsp EVO oil
– 1/2 cup Hestan Malbec
– 3 to 4 cups beef stock (or chicken or vegetarian stock)
– 2 tbsp grated Parmigiano, plus more for serving (or Grana Padano)
– 1 shallot (or white or yellow onion)
– 1/2 head of radicchio (or chicory or endive)
– 1 rasher bacon (or 3oz Taleggio cheese)

Equipment required:
– Chef’s pan for the risotto: ideally copper
– Small stockpot or saucepot for stock
– 10″ frying pan
– Wooden stirring spoon
– Ladle
– Cutting board
– Santoku or Chef’s knife
