Today, I am going to show you how to make apple strudel. This is a dessert that goes back centuries. The name strudel is clearly German as the dish was brought over to Italy during the invasion by the Austro-Hungarian Empire. This is why it is most commonly served in restaurants in those regions that share their borders with Austria, such as Trentino Alto Adige, for instance.
Apple strudel is relatively simple to make. Follow my instructions and the result will be fantastic. 🙂 Enjoy it!
INGREDIENTS (for 4 to 6 people)
For the dough
150gr of flour
1 egg
1 glass of water
1 table spoon of corn oil (or equivalent)
For the filling
750 of apples
50gr of sugar
50gr of raisins
50gr of breadcrumbs
30gr of pine nuts
40gr of butter
1 lemon
1 table spoon of ground cinnamon
PREPARATION
Mix the flour, egg, water and oil in a large bowl by using your hands. When the dough does not stick to the hands anymore, move it onto a work surface and keep working it by gradually adding some flour. Make a ball with a dough and wrap it with plastic film. Place it in the fridge for 30 minutes.
Meanwhile, melt the butter in a small frying pan and caramelize the breadcrumbs.
Chop the apples in small pieces. Add the sugar, pine nuts, raising, cinnamon and lemon zest. Mix them all together.
Remove the dough from the fridge. Spread some flour on a large cloth, place the dough over it and start flatten it by using a rolling pin. When it’s thin enough, spread some melted butter over it by avoiding the edges. Lay the caramelized breadcrumbs over the dough and then the apple mix over it. Carefully fold the dough over the apple filling by joining the sides over the top. Move the strudel onto a baking tray. Brush the surface with melted butter.
Cook in the over at 200C (400F) for 40 minutes.
To decorate the strudel, simply sprinkle caster sugar over the top.
