Today, I am going to show you how to make spaghetti alla carbonara, a simple and delicious dish made only with spaghetti, pancetta, eggs, Parmesan cheese, Romano cheese, oil, salt and pepper. Carbonara is a typical dish of Lazio, the region Rome is the capital of. Like many dishes of the Italian traditions, carbonara is a dish of the poor and goes back centuries. It’s not difficult to make so try it and enjoy it!

INGREDIENTS (for 4 to 6 people)

500gr of spaghetti
100gr of pancetta cubes
2 eggs
50gr of grated Parmesan cheese
50gr of grated Romano cheese
Olive Oil
Salt
Pepper

PREPARATION

Pour 3 table spoons of olive oil in a frying pan. Add the crushed garlic and let it fry for a couple of minutes. Add the pancetta cubes and let them cook for a few minutes. When the pancetta is cooked, turn the heat off.
Fill a deep sauce pan with water and bring it to the boil. Add a few pinches of coarse salt and the put the spaghetti in. Make sure they do not stick together. Let them cook until they are “al dente” – on the hard side.
Meanwhile, in a large bowl, whisk one whole egg and one yolk with the grated Parmesan and Romano cheese. Add a few pinches of ground pepper.
When the spaghetti are cooked (al dente!), drain them and place them in the large bowl with the egg mix. Add the pancetta cubes in. Mix them together until the egg mix is fully mixed with the pasta.
Plate the spaghetti and grate some Parmesan or Romano cheese over them before serving.

Better served hot.
