Tasty Cuisine Around The Globe By Khan’s Kitchenette 👩🍳
This recipe yields 4 calzone but the filling I’m mentioning below is for 2. You can use rest of the portions for regular pizzas or double the quantities of filling ingredients.
🥙

For Dough:
▪️Plain Flour 500gm
▪️Yeast 1 Sachet(7gm)
▪️Salt To Taste
▪️Oil 2 Tablespoons
▪️Lukewarm Water 315 ml
👉Knead everything for about 10 minutes and then cover and leave to rise in a warm place for 2-4 hours.
For Filling:
▪️Lamb Salami 200gm
▪️Sliced Mushrooms 150gm
▪️Fresh Basil Leaves 6-7
▪️Chopped Onion 1 (medium)
▪️Tomato Puree 4 Tablespoons
▪️Red Chilli (mild) 1
▪️Olive Oil 2 Tablespoons
▪️Salt & Black Pepper To Taste
▪️Chopped Garlic 1 Tablespoon
▪️Mozerrala Cheese per requirement
▪️Ricotta/parmesan cheese or mascarpone.
(You can use creamcheese as substitute).
👉 Saute onion and cook rest of the ingredients in oil. There shouldn’t be any moisture in the filling.
🍕 Cheese:
You need any of these 👉 Ricotta, mascarpone, parmesan (if you could find halal or vegetarian) and mozerrala cheese. You can use cream cheese if you like.
🍕
Method:
▪️Knead the dough with wet/oily hands for 5-7 minutes again.
▪️Leave to rise again for 30 minutes. Meanwhile prepare the filling.
▪️Roll out the pizza dough. Fill the half of it with salami filling, top it with cheese and fresh basil leaves.
▪️Close (turnover) the other side like a semi-circle. Close carefully.
▪️Brush the pizza with tomato puree, that’s how calzone is supposed to be.
▪️Bake it on 250°c (fan 230°c) for 12-14 minutes depends upon the oven.
▪️Ready 😋
⚠️ In our videos we provide general guidelines and proportions. Kindly adjust the quantities according to your taste and requirement.
