CHEESY SPINACH MALFATTI
Ingredients for Dumplings:
200gm Spinach (blanch + chop + drain water)
150gm Grated Paneer
150gm Grated Cheese
1tbs chopped Garlic
2ts. Mix Herbs and chilli flakes
Salt to test
1ts. Black pepper powder
2tbs. Oliv Oil or regular oil
½ Cup all-purpose flour or wheat flour
Water for boiling
METHOD:
1. Heat oil in a non-stick pan, add garlic and let it cook for a minute till it turns golden brown.
2. Add blanched spinach to the oil and let it cook for 2 minutes.
3. Remove garlic and spinach in a mixing bowl and add all the other ingredients of dumpling.
4. Make a dough out of all the ingredients and roll circular dumplings out of it.
5. Put the dumplings in boiling water (add oil to the water so the dumplings don’t stick to each other) and let them boil until they float on top of water.
6. Remove the dumplings out of water and place them aside.
Ingredients for Sauce:
6 to 7 big size chopped tomatoes
½ Cup tomato puree
3tbs. Olive Oil
Salt to test
1tsp. mix herbs
11/2tsp. chilli flakes
1ts. Black Paper powder
2tbs. chopped garlic
Grated lemon zest
METHOD:
1. Heat oil in a non-stick pan, add garlic and let it cook for a minute till it turns golden brown.
2. Add the chopped tomatoes and spices. Cook till tomatoes turn soft
3. Add 1 cup water and let it cook for 5 minutes more
4. Cool down the mixture and make a fine puree in a mixture-grinder.
5. In a pan, mix the fresh puree with the ready-made puree and add lemon zest on top.
6. Cook for 2-3 minutes and the sauce is ready.
Pour the sauce as a base in a serving plate, place the dumplings on top and garnish with basil and coriander leaves. Delicious Malfatti is ready!
