Celebrate Mother’s Day by giving your mom what she wants: Kale & Cauliflower! (at least that’s what my mom would want… so just do what you want)
Anyways, in today’s episode, I’m going to show you how to make cauliflower steak, sauteed kale, smashed roasted baby red potatoes, and avocado crema.
What you’ll need:
– 1 head of cauliflower
– 1 bag of baby potatoes
– 1 bunch of lacinato kale
– 1-5 cloves of garlic, minced
– salt & pepper
– grape tomatoes
– EVOO and/or butter
– steak seasoning (or your favorite blend of seasonings for steak)
– italian herb seasoning (usually found in the salad dressing aisle in a small yellow box with a red banner)
– 1 ripe avocado
– almond milk, unsweetened
– vegetable broth, low sodium
– greek yogurt, plain (or sweetened if you hate the taste of sour cream)
– 1 ripe lemon
– *EXTRA* 3 large onions to caramelize and top the steak with (I forgot to get these for the video but it would go perfectly!)
Feel free to make this your own by substituting the cauliflower for real steak or seasoning it with your favorite dry rub or even a splash of worcestershire sauce! If you’re someone who loves simple foods, let the kale shine by only seasoning it with a little salt, pepper, and even a splash of lemon juice 🙂
Lastly, the baby potatoes. You have free reign to change those up however you want. If you’re someone who prefers butter, mix up melted butter, fresh sage, fresh thyme, chives, garlic, and paprika or cayenne and pour your mixture on the potatoes.
Notice I did not mention how you can customize my avocado crema… it’s probably not going to taste like something you’d eat plain because it kind of tasted like sour cream. BUT, when everything came together, it was perfect! Don’t touch it. Unless you don’t use yogurt as a base. Then, blend more avocado’s to create a stronger base and slowly add your favorite nut milk (preferably unsweetened) to get the same consistency.
