Got a few extra Bell Peppers sitting around? How about making this delicious antipasto in just five(ish) easy steps?
Almost every Italian American family has their own recipe for these sweet roasted peppers, and this one is a combination of a few unique versions we’ve encountered over the years. This smokey, sweet and savory mixture is delicious on a crusty piece of Italian bread, as a special side dish, or a quick snack straight out of the fridge… where they’ll last for 5-7 days getting even better with time!
So why not give them a shot the next time you put out the antipasti for your friends and famiglia!
Italian American Roasted Peppers (Peperoni Arrostiti)
Ingredients:
– 2 whole Bell Peppers (red, yellow, or orange work best)
– 1 Clove Fresh Garlic
– 2 Tablespoons Toasted Pignoli (Pine) Nuts
– 2 Tablespoons Golden Raisins
– A Pinch or Two of Parsley (dried or fresh chopped)
– Salt and Pepper
– Extra Virgin Olive Oil
Step 1-
Grill whole peppers until skins have completely charred on all sides, turning frequently. This can be done on an open stove-top flame, on the roasting or broiling setting in the oven, or on an outdoor barbecue. Once they are completely blackened, set them in a tightly closed paper bag to fully cool.
Step 2-
Remove the peppers from the bag and give them a QUICK rinse (too much water washes off flavor), then peel off the burnt skin, halve the peppers and remove the seeds, and slice them into strips and set aside in a mixing bowl.
Step 3-
Lightly toast the pignoli (pine) nuts on a hot pan over the stove or on a baking sheet in the oven to really bring out their flavor. Then roughly chop or press a large clove of garlic and mix these and the golden raisins into the peppers.
Step 4-
Sprinkle the mixture with salt and pepper to taste, and a few pinches of parsley. Alternatively you can use basil or oregano if that better suits your family’s tastes. Then drizzle with good extra virgin olive oil, and toss the entire mixture together, mixing well.
Step 5-
Cover your roasted peppers and let them sit for a while… the longer they rest the more time the flavors have to mix!
And… ECCO! You’re ready to serve your fresh Roasted Peppers!
