The “Frittata di Maccheroni” or pasta omelette is a typical Neapolitan preparation, a hearty and really delicious single dish.

It is usually prepared with the leftover pasta of the day before to add eggs, cheese, especially mozzarella, scamorza or caciocavallo cheese, bacon, ham or with what you have in the fridge, but it can also be made with freshly drained pasta.

The pasta omelette can be enjoyed hot and it is also excellent cold: it is the perfect street food to try!

Many Neapolitans love to enjoy it in summer, as a lunch on the beach.

300-350 gr of cooked Pasta (spaghetti, linguine, bucatini, …)
5 eggs

80 gr of grated parmesan cheese
250 gr of mozzarella, scamorza, …
Your favorite topping to put in the middle of the omelette (pancetta, peas, …)
Salt & pepper
Olive oil and a knob of butter to fry the omelette
