I had a couple of zucchinis in the fridge and some eggs that I wanted to get rid of… So, I decided to cook some pretty awesome “Zucchini Carbonara” (‘zucchine alla carbonara’, in Italian).
Can’t describe how tasty it was with that #pecorino all over it!

PASTA ZUCCHINI CARBONARA – RECIPE
Prep Time: 20 mins
Cook Time: 30 mins
Complexity: Easy
Ingredients (4 people):
400gr /14oz pasta
2 zucchini
2/3 eggs
100gr / 3.5oz Pecorino cheese
1 onion
Extra-virgin olive oil
Freshly cracked black pepper
Procedure:
1) Put a large pot of salted water on the stove to boil;
2) Heat a large pan with abundant EVOO and the chopped onion;
3) Add the chopped zucchini in the pan;
4) In a separate bowl prepare the egg/cheese cream: crack 2 eggs in the bowl and pour 80% of the cheese. Add some pepper and start whisking;
5) When the water is boiling, put the pasta in the large pot;
6) When the pasta is ‘al dente’, move it in the pan with the zucchini. Make sure there is almost NO HEAT and then pour the egg/cheese cream we just prepared. To make this mix creamier, add a bit of water.
7) Mix it all up, add more pecorino and pepper as you like and buon appetito!
