Ingredients

Sauce

1. 1/4 cup EVOO
2. 3 medium yellow onions, cut into thin slices
3. 6 cloves garlic, grated
4. Kosher salt
5. 1 TBSP crushed red pepper flakes
6. 1 TBSP granulated sugar
7. 3 (28-ounce) cans San Marzano whole plum tomatoes
8. Handfuls fresh basil leaves
9. 1 lb. Spaghetti

Eggplant (Brinjal)
2 medium eggplants, washed and sliced thin
1/2 cup all-purpose flour
Freshly ground black pepper
1 large eggs
2 TBSP whole milk
4 cups Italian-style breadcrumbs
1 TBSP dried oregano
1 TBSP fresh thyme leaves
1 ½ – 2 cups Vegetable oil
1 1/2 lbs. mozzarella cheese, cut into thin slices
1/2 cup grated Parmesan

Tuesday – Steamed Fish
Ingredients
1. 3-4 pieces Any white fish Cod, Snapper
2. 2 bunches Green onions
3. Ginger 1inch for the sauce and 1inch Julianne for garnish
4. 3cloves Garlic
5. 1/2 cup Soy sauce
6. 1/4 cup Chinese vinegar
7. 1 TBSP sugar
8. 1 TBSP Oil

Tuesday – Burnt Ginger Rice
Ingredients
1. 2 cups of small grain Rice
2. 2 inches Ginger julienne
3. 1 TBSP Oil
4. 4 Cups of Water or Chicken Stock. Remove 2 TBSP
5. 2 TBSP Soy sauce
6. 1 tsp hot sauce
7. 3 green onions whites cut into 1-inch pieces and Greens cut at a bias for garnish

Wednesday – Kung Pao Chicken
Ingredients
Chicken and Sauce
1. 1 ½ lb. boneless, skinless chicken thighs, trimmed and cut into ½-inch cubes
2. ¼ cup soy sauce, divided
3. 1 TBSP cornstarch
4. 1 TBSP Chinese rice wine or dry sherry
5. ½ tsp white pepper
6. 1 TBSP Chinese black vinegar
7. 1 TBSP packed dark brown sugar
8. 2 tsp toasted sesame oil

Stir-Fry
1. 1 TBSP minced garlic
2. 2 tsp grated fresh ginger
3. 2 TBSP plus 1 teaspoon vegetable oil, divided
4. ½ cup dry-roasted peanuts
5. 10 – 15 dried chilies, halved lengthwise and seeded
6. 1 tsp Sichuan peppercorns, ground coarse
7. 2 celery ribs, cut into ½-inch pieces
8. 5 scallions, white and light green parts only, cut into ½-inch pieces

Thursday – Pan Fried Salmon with pan sauce and vegetables
Ingredients
Salmon
1. 4 pcs (2lbs) Salmon with skin
2. 1 TBSP Oil
3. 1/4 cup Onion chopped
4. 1 TBSP White wine Vinegar
5. 1 TBSP Mustard (Dijon/Spicy)
6. 1 tsp Thyme
7. 1/2 cup Chicken stock
8. Salt and pepper to taste

Vegetables
1. Broccoli
2. Baby Carrots
3. Any other vegetables that you want
4. 1 TBSP Oil
5. 1 tsp Sugar
6. Salt and pepper to taste

2. ¼ tsp Baking soda
3. 8 ounces ground pork
4. 3 Garlic cloves, minced
5. 1 ¼ tsp minced fresh Rosemary
6. 1/8 tsp ground Nutmeg
7. 8 ounces Cremini mushrooms, trimmed
8. 7 tsp Oil
9. ¾ cup Heavy cream
10. 1 lb. Shell pasta
11. ½ cup dry white wine
12. 1 ½ ounces Pecorino Romano cheese, grated (3/4 cup)
13. 3 TBSP minced fresh parsley
14. 1 TBSP lemon juice
