Today’s video I show you how to make risotto! I go through each step showing a very simple recipe – the full steps and ingredients are below!

Red Wine & Goat Cheese Risotto
Ingredients (2 servings):
½ cup Arborio rice
1 – 2 tbsp. olive oil
1 – 2 tbsp. butter
Half medium onion, diced
1 package sliced mushrooms
2 – 3 cloves minced garlic
½ cup red wine (Cabernet Sauvignon, Merlot, Pinot Noir, etc.)
1 – 2 cups beef stock (any flavor stock with work)
2 oz. goat cheese
1 tsp. dried basil (fresh is better if you have it)
Salt & pepper
Steps:
1. Prepare vegetables as needed
2. In a medium sauce pan at medium heat, add in ½ to 1 tbsp. each of olive oil and butter
3. Once pan is hot and butter has melted, add in onion and sauté for 2 -3 minutes
4. Add mushrooms into pan and season with salt and pepper
5. Cook vegetables until caramelized about 10-15 minutes; set aside when done
6. In same pan, add another ½ to 1 tbsp. each of olive oil and butter still at medium heat
7. Add garlic in for about 30 seconds; careful not to burn
8. Once garlic is fragrant, add in rice and cook for 2 – 3 minutes until rice has just slightly started to brown, stirring frequently
9. Slowly add wine into pan and cook until rice has absorbed the liquid, stirring frequently about every minute
10. Add in ½ cup of stock at a time until rice has absorbed the liquid, stirring frequently about every minute
11. Once rice has become to the correct texture (explained in video), turn off heat and add in cheese, basil, salt and pepper; stir to combine
12. Serve topped with additional goat cheese and fresh basil
This recipe makes about 2 servings.
