Tonight, we are having Fresh bow tie pasta, feta cheese, mushrooms, herbs, and olives, along with Italian green beans! Delicioso! Buon appetito!
Ingredients:
Italian Bow Tie Pasta:
*2 cups bow tie pasta
*4 cups water
*1 tablespoon olive oil (for pasta)
*2 oz fresh or dried (soak in water) mushrooms
*salt to taste
*2 oz feta cheese (cubed)
*1/2 tablespoon olive oil with fresh herbs ( chopped oregano, rosemary, thyme, etc.)
*2 to 4 oz mixture of Kalamata olives and black olives
*4-6 oz fresh or canned diced tomatoes
*2 oz shredded Italian mixture of cheeses (I used Provolone, Asiago, and Parmesan.)
Directions: On stovetop, add water to sauce pan (burner on high) and bring to a boil. Then, add pasta and olive oil. Bring to a boil again and cook for 10-15 minutes with lid off. Turn burner down to low simmer and cover for another 5 minutes; take a fork and test your pasta to see if it is done (You don’t want it al dente, which is firm to the bite, or mushy.). When your pasta is ready, drain your pot and add feta, tomatoes, olives and olives oil with herbs. Stir other ingredients into the pasta. Turn burner to medium heat and cook for another 15-20 minutes. Dish onto serving plate or bowl; add shredded Italian cheeses on top. Serve and enjoy!
Italian Green Beans:
*Fresh Italian Green Beans (soaked in water for 15 minutes)
*salt to taste
*2 oz butter
Directions: On stovetop, add green beans, 1 cup of water, butter, and salt to medium saucepan. Turn burner to high and cook for 15-20 minutes, or until soft, but not mushy. Dish onto serving plate or bowl, serve, and enjoy!
