My Steak Sandwich Recipe:
Serves 4 – 6
Cooking time 20 – 25 mins
Difficulty – Impossible if you are a vegan
Ingredients
Olive oil for cooking
1 Beef fillet aprox 800g
1 Garlic bulb cut in half horizontally
1 Bunch of thyme springs
Butter
Salt and pepper
Cos lettuce to serve
For Dion’s tomato relish
Olive oil for cooking
1 red onion – finely diced
1 punnet of red cherry tomatoes
1 punnet yellow cherry tomatoes
1 chilli – pop the top and chop finely
1 – 2 tablespoons of sherry vinaigrette
1 good handful of fresh basil leaves
For the secret sauce
3 tablespoons of high quality mayonnaise
3 teaspoons of high quality grain mustard
For the toasted ciabatta
12 slices of ciabatta1.5 – 2cm thick

Method
Step 1
Preheat the oven to 200 degrees c.
Step 2
Heat large ovenproof pan until hot. Add 2-3 tablespoons of olive oil.
Step 3
Sprinkle salt and pepper on the fillet of beef generously and rub in the seasoning. Fry over high heat on each side and ensure the beef is gently seared on all sides including the ends.
Step 4
Add garlic and thyme sprigs, cook for 1min then place them under. Sit them under the beef fillet.
Step 5
Take 2 generous knobs of butter and place in pan to baste over the steak. Put the pan into the oven for 12-15 mins so as to cook it to medium rare. Once cooked, take the meat out and rest for aprox 10 mins then slice thickly.
Step 6
Meanwhile in a separate frying pan, heat olive oil and add the diced onion and chillies. Fry over a medium heat for about 3-5 mins until they soften. Add all the tomatoes then season with salt and pepper. Cook for 6-8 mins until tomatoes start to soften. Use your wooden spoon or spatula to push the tomatoes down while mixing them.
Step 7
Add 2 tablespoons of sherry vinegar and stew this down for about 6-8 mins until reduced to a rough relish consistency.
Step 8
Add in basil and season well. Tip into a serving bowl and place aside.
Step 9
Create the special sauce by combining the mayonnaise and mustard. Mix these ingredients together and set aside.
Step 10
At this point begin to toast you ciabatta, drizzle olive oil onto each side of the slice to ensure a golden color on both sides.
To serve – Order of assembly
• Ciabatta
• Mustard/Mayo sauce
• Cos lettuce leaf
• Thick slice of fillet of beef
• Generous serve of tomato relish
• Ciabatta
