3-4 Courgettes (Julienne Strips – matchsticks)
250g Tagliatelle or similar pasta (fresh/ pre-made/ dry)
25g Parmesan Cheese or Parmigiano Reggiano (finely grated)
1 small Lemon (Zested & Squeezed/ juiced)
15-20g Fresh Mint (Torn)
1 tbsp Ricotta (to serve or 4 tbsp added)
Chilli Flakes (to serve)
Sea Salt (pinch) & Pepper
