Aqua Cotta, or Cooked Water Soup, is a rustic Italian peasant bread soup that’s recipe varies greatly by region and season. This simple, satisfying and so inexpensive soup uses whatever vegetables are in season with water serving as the broth. In the variant that we make in this video, eggs are used to thicken and enrich the broth. Once again, I am joined by Atinuke Durojaiye from PurH2O and we use her wonderful tasting water to make our Aqua Cotta.
