Aubergine Parmigiana Ingredients & Recipe

For the tomato sauce (follow the Chicken Milanese video for method):

– 1 large onion
– 4 cloves garlic
– 1 can tomatoes
– 1 carton passata
– 1 tblsp tomato puree
– 1 tsp sugar
– salt and pepper
– oil for frying

For the Aubergine Parmigiana:

– 1 large aubergines
– lots of oil for frying
– 2 balls fresh mozarella
– large bunch fresh basil
– approx. 50g parmesan cheese
– salt and pepper
