1. Smokey Qeema Samosa Filling Recipe
Ingredients for 35-40 samosas
β’ Minced meat (Mutton or Beef) 1/2 kg
β’ Oil 2 tbsp
β’ Onions 2 medium sized, chopped
β’ Ginger paste 1 tsp
β’ Garlic paste 1 tsp
β’ Salt to taste
β’ Red chili powder 1 tsp
β’ Turmeric powder 1tsp
β’ Garam masala 1 tsp
β’ Coriander powder 1 tsp
β’ Water as needed
β’ Green chili 1-2, chopped
β’ Fresh Coriander 2 tbsp chopped
β’ Lemon juice1 tsp
β’ Coal (koila/charcoal) 1 piece
β’ Samosa sheets (samosa patti) 35-40 (I used Sumbullah brand)

Ingredients: for 14-16 pockets
For Cottage Cheese
β’ Milk 1 litre
β’ Tatri (lemon salt) Β½ tsp or less (or use lemon juice 3-4 tbsp)
β’ Muslin cloth
For the Filling:
β’ Cottage Cheese 1 cup
β’ Dates 1 cup
β’ Walnuts 1/2 cup
β’ Honey 3-4 tbsp
β’ Cardamom powder 2-3 pinch
β’ Spring Roll Sheets (Roll patti) 14-16

3. Aloo Kaju Samosa Filling Recipe
Ingredients for 25-30 Samosas
β’ Coriander-cumin powder mix (Dry roast 1 tbsp coriander seeds and 1 tsp cumin seeds and grind into powder)
β’ Oil 2 tbsp
β’ Cumin seeds 1/2 tsp
β’ Green peas 1/2 cup (I used frozen, if you are using fresh then boil them until half cooked)
β’ Cashew Nuts 15, roughly broken
β’ Boiled Potatoes 1/2 kg, boiled and mashed
β’ Red chili flakes 1/2 tsp
β’ Salt 1 tsp (or to taste)
β’ Lemon juice 1 tsp
β’ Fresh coriander leaves 2 tbsp
β’ Fresh green chilies chopped 1-2
β’ Samosa patti (sheet) 25-30

Ingredients for 10-12 pockets
β’ Chicken 200 grams, boiled and shredded
β’ Maggi noodles 1 packet (80 grams)
β’ Ginger paste 1 tsp
β’ Garlic paste 1 tsp
β’ Chopped Onions 2 tbsp
β’ Cabbage 1 cup shredded
β’ Carrot 1/2 cup, julienne cut
β’ Green capsicum 1/4 cup
β’ Yellow capsicum 1/4 cup (optional)
β’ Soy sauce 2 tbsp
β’ Chili sauce 2 tbsp or more
β’ Salt to taste
β’ Black pepper to taste
β’ Spring onions 2-3 tbsp
β’ Spring roll sheets 10-12

Ingredients for 20-25 spring rolls
β’ Onions 2 tbsp, chopped
β’ Oil 2 tbsp
β’ Ginger paste 1/2 tsp
β’ Garlic paste 1/2 tsp
β’ Chicken 250 grams, coiled and shredded
β’ Carrot 1/2 cup, julienne cut
β’ Cabbage 1 cup, shredded
β’ Red capsicum 1/4 cup, julienne cut (optional)
β’ Yellow capsicum 1/4 cup, julienne cut (optional)
β’ Green capsicum 1/2 cup, julienne cut (use 1 cup if you donβt have yellow and red capsicum)
β’ Boiled corn 1/2 to 1 cup
β’ Vinegar 1 tbsp
β’ Red chili Sauce 2 tbsp or more to taste
β’ Soy sauce 2 tbsp
β’ Salt to taste
β’ Black pepper powder to taste
β’ Spring onions 4-5 tbsp
β’ Spring roll sheets (Roll patti) 20-25
