Are you missing Casey’s Corner at Magic Kingdom? We are too. So we went to the store and got as much as we could to recreate this beloved plant based hot dog.
The Slaw
2 teaspoons Cilantro
1 carrot
2 shallots
cabbage
shred all ingredients together and set aside in a jar
1/2 rice vinegar
1/2 water
Boil together and whisk in
1 Tablespoon mustard seed
1 Tablespoon sugar
Pour the mixture into the jar and refrigerate for 12 minutes
The Aïoli
Mix 1 part vegan mayo and 1 part tangy bbq sauce
Refrigerate for at least 15 minutes
The corn
If you can flame roast corn and peppers from fresh, that is preferable. If canned, reheat and set aside
The hot dogs
Cook the Beyond Meat Hot Italian sausage as the packaging directs
Plating
Heat or toast a hot dog bun (optional) and place the sausage on top. Add a healthy amount of slaw, sprinkle some corn, drizzle the aïoli to taste, and enjoy!
