“Pasta alla Norma” is one of the most famous Sicilian recipes in the world.
It was so called in honor of Vincenzo Bellini’s opera“Norma”.
The story says that in 19th century, Nino Martoglio, a Sicilian writer, poet and theater director, was so impressed when he first tasted this dish that he compared it to “Norma”, Bellini’s masterpiece.
And the name lasted ever since.

* 350g (0,77lb) (12,34oz) penne
* 2 eggplants
* 140g (5oz) salted ricotta
* 2 mozzarellas (about 200gr, 7oz, 0,44lb)
* 500g (1,10lb) canned tomatoes
* 2 cloves of garlic
* 5 basil leaves
* salt and pepper to taste
