Ingredients:
500 gr of spaghetti
Salt and pepper to taste
20 gr of butter
5 eggs
50 gr of grated cheese
100 gr of mortadella (Bologna sausage)
100 gr of sliced smoked provola
Extravirgin olive oil to taste
Method:
I cook pasta “Al dente” in enough salty water. I drain it and then I mix it with the butter, then I let it cool. In the meantime I beat the eggs and I add the grated cheese and the pepper.
I now add the cooled pasta to the egg and cheese mixture and I mix together. I coat a frying pan with oil and I let it heat, then I add half of the spaghetti, I top it with the sliced mortadella and the smoked provola, then I layer the remaining pasta on top.
Now I put the lid on the pan and I let it cook normally until the bottom is crusty and it gets golden brown. Now I help myself with a flat plate to flip the frittata out of the pan and slide it back in on the other side. Now I let it cook for 5 more minutes. In case the frittata is thick I let it cook for a few more minutes.
