We are back in Canada. Today, I want to show you how to make Tiramisù. This is a variation of the original recipe that uses only eggs. I have added whipping cream in mine because it makes it firmer and creamier. I you enjoy it!

INGREDIENTS
2 eggs
100gr of sugar
200ml of whipping cream
250gr of mascarpone cheese
1/2 glass of rum or Marsala
Savoiardi biscuits (or finger biscuits) as needed
Coffee as needed
PREPARATION
Separate the egg whites from the yolk – be careful not to contaminate the egg whites with the yolks.
Whisk the egg whites until they are firm.
Whip the fresh cream.
In a bowl, beat the egg yolks with the sugar. Then add the rum. Slowly add the whipped cream.
Lastly, fold in the whisked egg whites.
Dip the savoiardi biscuits in warm coffee and lay them on a tray. Place the first layer of mascarpone mix over it.
Dip a second batch of savoiardi biscuits in coffee and place them over the mascarpone layer. Then add the last layer of mascarpone.
Place in the fridge and leave for at least three hours.
