For today’s video, my good friend – and chef- Christin, joined me to teach us how to make a yummy and super easy grandma-style soup. Totally comfort food.
Sorry about the camera shakes…still learning how to hold it, film and cook at the same time! 😀

Here’s what you need (recipe for 4 people):

3 medium sized potatoes (yukon gold variety is one of the best for this recipe)
2 small onions
3 medium carrots
1 leek (white part)
1 tablespoon butter
2 slices of smoked bacon
3 vienna sausages
parsley (opcional)
a good baguette (optional)
chicken stock —for this recipe we made our own but you can use powdered stock (not the same taste, though)

Method

Chop all your ingredients (cut into pieces that are all the same size so they’ll cook uniformly)
Sear your bacon in a hot pot over medium heat until you see a light brownish caramel forming on the bottom of the pot.
Add the butter and cook for 1-2 minutes.
Add the onions, leek, carrots and potatoes. Over a medium heat, let it simmer for about 15 minutes, stirring every now and then. This step is very important …your veggies are going to “marinate” during this process and you will end up will a much more flavourful soup.
Add your stock – make sure your vegetables are all covered by the stock- and cook it over a medium / high heat . When it comes to a boil, cover the pot and lower the heat, leaving it to cook for about 30 minutes or until your vegetables are fully cooked.
Mix it all in a blender until smooth and creamy.
Slice the sausage and heat it on the soup.
Garnish with parsley and serve with a piece of fresh baguette and a pint of a good german beer 🙂
