How to make a sandwich without bread and without eggs using Potatoes and Cheese. Filled with gooey stretchy cheese and ham, this sandwich bread is made with a delicious Potatoes and Parmigiano Reggiano (or Parmesan if you can’t find the original Italian cheese) mix.
I think this is even better than a classic bread sandwich, try it, you won’t regret it!
*Cheese: For the classic Montecristo sandwich, you can use Emmentaler or Gruyere cheese, but I use an Italian Provola Cheese. You can even use your favourite cheese like Cheddar, Mozzarella….

Ingredients
Makes 3 sandwiches:
500 g (1 pound) Yellow Potatoes, peeled
25 g (1/3 cup) Parmigiano Reggiano, or Parmesan Cheese, grated
70 g (1/2 cup) Bread Flour
25 g (1/4 cup) fine homemade Breadcrumbs
Black Pepper
6 sheet of Cheese slices (I’ve used italian Provola Cheese, you can use Cheddar, Mozzarella, Switzerland…)
Ham
Directions:
1. Cut peeled potatoes in big chunks and cook in boiled salted water until fork tender.
2. While still hot, place potatoes in a potato ricer and push them (or you can use a potato masher).
3. Add grated Parmigiano Reggiano, black pepper and flour to the mashed potatoes and combine.
4. Add fine homemade breadcrumbs (you can use a strainer to get fine powder), salt if necessary (I didn’t add salt because I cook potatoes in salted water and Parmigiano Reggiano cheese is salty) and combine with a spatula to get a non-sticky but soft dough.
5. Refrigerate the dough for about 15-30 minutes
6. Meanwhile grease 2 parchment paper sheet with flavorless vegetable oil (Sunflower Seed Oil) and sprinkle with fine breadcrumbs.
7. Heat a grill over low heat.
8. Place the chilled dough onto a greased parchment paper sheet, cover with the other greased sheet and use a rolling pin to roll the dough until about 1 cm thick.
9. Cut out a 22 cm sqare and divide it into 4 squares about 11 cm each.
10. Place two slice of cheese over two potato squares, place ham, then cheese slices.
11. Using a spatula, take a potato square and use it as a top for the sandwich.
12. Grill the sandwiches over medium heat and cook each side for about 4-5 minutes or until golden brown.
