When working on the latest lemon wine, I ran into a little bit of an issue. The wine bubbled out of control, spewing out of the top of the carboy and all over the floor. I lost about a gallon of wine when this happened. This was due to a tannin addition to a warm and vigorously fermenting wine without enough headspace. This can also happen pretty easily if you add yeast nutrient to a wine that is fermenting in a carboy.
