ITALIAN SUSHI RECIPE :

What You’ll Need:
2 Tablespoons Butter
3 Cloves Garlic
1.5 Salt
1 Cup Sushi Rice
1 Cup Dry White Wine
3 Cups Vegetable Stock (hot)
1/4 Cup Shredded Parmesan
Prosciutto Slices
Nonstick Cooking Spray
Basil Leaves
Large Stalks of Asparagus
1 Ball fresh Mozzarella
(Roasted Red Pepper if desired)

What To Do:
1. Cook the Risotto: In a large skillet (with high walls) melt the butter over medium-low. Add the garlic and salt to the skillet and cook for 1-2 minutes. Stir in the rice and toast for 2-3 minutes.
2. Increase heat to medium and add the wine – cook until absorbed by the rice for 5-7 minutes. Add a cup of the hot vegetable stock and let it fully absorb in the risotto, before adding another cup, and then another. Turn off the heat and add in the parmesan cheese.
3. Line a baking sheet with parchment paper and add the risotto on top. Let cool for five minutes and then deposit in the fridge for 30 minutes to set.
4. Prepare the sushi fillings: cook the asparagus/peppers, slice the mozzarella, set out the prosciutto and basil.
5. On your sushi mat’s smooth side, lay out four slices of prosciutto and pat down the cooled risotto on the bottom side of the prosciutto. Lightly grease your hands with nonstick spray and flatten the risotto down. Add the fillings on top of the risotto, and use the sushi mat to roll. Set the roll on a cutting board and slice into 6-8 pieces.
6. Serve the sushi with balsamic vinegar, pesto, and shaved parmesan. Enjoy!
