The creamiest Carbonara you’ll ever made using just the egg yolks.
This is the authentic italian recipe of this amazing pasta. You can use Rigatoni, or Spaghetti. Also you can substitute Guanciale with smoked Pancetta, but you’ll have a better taste with the pig jowl.
For one person:
100 gr Rigatoni Pasta
100 gr Guanciale (Pig Jowl)
2 Egg Yolks
1/2 Tsp Nutmeg
1 Cup Pecorino Romano Cheese
Salt and Pepper to taste
