This easy and delicious pasta carbonara recipe brings restaurant-style pasta right in the comfort of your own home. This recipe takes less than 15-minutes and tastes wonderful with a side of veggies and some white wine. The full recipe description is below:
1-pound of spaghetti
2-tbs EVOO
1-cup chopped red onion
1/2-package bacon, diced
2-eggs
2-cups fresh shredded parmesan
In a large Dutch oven, saute the chopped red onion and bacon in the olive oil.
Saute until the bacon is cooked and the onions are translucent.
While the bacon is cooking, cook the pasta in salted, boiling water.
Reserve 1-cup of pasta water from the cooked pasta.
Wisk the eggs in a small bowl with sea salt and black pepper.
Drain pasta and add it to the Dutch Oven with the bacon and onion. Next, add the cup of pasta water and the eggs on low heat.
Toss the pasta, eggs, and water together quickly so that the eggs do not cook all the way through.
Turn the heat off and add in the parmesan cheese and toss everything again until combined.
Serve immediately and enjoy!
