This recipe came from my Mother n law years ago and I have been making it ever since. Its quick and easy. You may already have all the ingridents on hand. Takes no longer then 10 minutes to make from start to end.

INGREDIENTS:
2 tsp of olive oil
2 onions finely chopped
2 tablespoons of tomato paste
4 to 5 garlic cloves chopped
2 heads of Escarole
2 cups of drained White northern beans
2 cups of pepperoni cut in half or fourths
1 cup of Parmesan cheese
1 tsp of garlic powder
1 tsp of basil
1 pinch of pepper seeds
salt and pepper to taste
Directions:
Boil your Escarole then drain
add your oil to a pot add the chopped onions and garlic and cook slowly to not burn the garlic. Once the onions are translucent add the Escarole and saute for 10 minutes
add your seasoning mix thoroughly
Add 2 tablespoons of tomato paste or sauce and combine
add your beans and heat thoroughly do not break your beans all up.
Then go ahead and add your pepperoni cook for 5 more minutes add the cheese and then serve in a bowl with some crusty Italian bread. I hope you enjoy this recipe and give it a try Please Subscribe Smash the like button and until next time I Bless You.
