1 CUP WHITE WINE
SALT
RED PEPPER FLAKE
SAUTEE GARLIC AND PEPPER FLAKE IN OIL, AS SOON AS IT START FRYING ADD CRUMBLED SAUSAGE AND BROWN. ONCE COOKED DOWN DEGLAZE PAN ON HIGH HEAT WITH GLASS OF WHITE WINE (BE CAREFUL)
BLANCH BROCCOLI IN SALTED WATER FOR 1 MIN AND THEN TRANSFER INTO SAUSAGE PAN.
TOSS PASTA INTO SALTED BOILING WATER FROM THE BLANCH. ADD A SCOOP OF PASTA WATER TO START REDUCING INTO THE SAUSAGE PAN.
ONCE 1/2 COOKED, TRANSFER PASTA WITH STRAINER TO SAUSAGE PAN AND COOK ON HIGH. ASS 1-2 LADLES OF PASTA WATER. THE GOAL IS TO COOK OFF ALL THE WATER BY THEW TIME THE PASTA IS COOKED. MAKING A CREAM FROM THE STARCH.
