Dì sān xiān (地三鲜) is a typical vegetarian food of the Northeastern Chinese cuisine that is made by the combination of eggplant, sweet peppers and tomatoes. The name means “three treasures from the earth” because it uses three of the most delicious vegetables. Enjoy this variant cooked in a wok with fewer oil.
