Hello, just wanted to make something for my wife for dinner that’s warm and filling. 60 degrees is a cool day in Florida and this meal really made us warm. It’s good old Italian comfort food that came from my stepfather’s side of the family who are all Italian. Anyways, below is the recipe if you want to try it at home:
1 Tbsp olive oil
1 lb. Italian sausage
1 yellow onion
7 cloves garlic
1/2 lb. carrots (about 3-4)
28 oz. can of diced tomatoes
1/2 tsp dried basil
1/2 tsp dried oregano
Dash of chili powder
1/3 tsp. of black pepper
1 tbsp. of salt
3 cups vegetable broth
3 cups water
12 oz. cheese tortellini
1. Cook the sausage on the grill, 10 minutes for each side, on low-medium heat. Or you can cook in the pan for the same amount of time.
2. Chop 1 yellow onion and mince 7 cloves of garlic. Saute them in a large dutch oven with 1 Tbsp. of olive oil until onions are soft and translucent.
3. Add 1/2 lb. of carrots, cook for about 3 minutes. Then add 3 cups of vegetable broth, 3 cups of water, a 28 oz. can of diced tomatoes, and turn the heat on high. Bring to a boil. Ladle the bubbles/foam out of the soup.
4. Take the sausage off the grill and slice. Add them to the pot along with the package of tortellini. Add all the seasonings and stir. Lower the heat to medium and cover. Cook for an additional 10 minutes.
5. Serve with green scallions or topped with chili pepper flakes
