Savory soup!! A must try.
Italian Wedding Soup,
Cut in small pieces:
-3 celery sticks
-4 carrots
-1/2 onion
Set aside.
In a mixing bowl of a stand mixer put:
-1 1/2 lb ground beef
-1 1/2 lb ground chicken
-1/2 onion that is shredded
-1 bunch of fresh parsley leaves that ares chopped
-2 tbs salt
-1 tsp black pepper
-1 egg
-1/2 cup Italian bread crumbs
-1/2 cup water
Mix well and make small meat balls.
Heat up water in the pot, add 1 tbs salt. When water boiling add the cut vegetables and the meat balls. Cook for at least 1/2 hr. Add 2 tbs of vegeta, if you don’t have vegeta use chicken bouillon.
After half an hour add 1 bunch of fresh parsley leaves and 10 oz of baby spinach into the soup pot. Cook for a few minutes.
In a separate pot boil 1/2 cup of noodles. Strain and rinse. Set aside.
Add the noodles into the soup pot.
Ready to serve.
