“Pasta A La Gabbi”
Authentic Italian recipe taught to me by my good friend Gabriele. So I hope you like it

Makes ; 2-3 portions

Ingredients
400 g pasta ( white or wholewheat)
400g Tomato Puree (Passata)
1 white onion
2 clove garlic
4 tbsp Olive Oil
salt and pepper

Optional
Chilli flakes

Instructions:
1. Boil up water in a large pan for the pasta. I used Tortiglioni which takes 12 mins for Al Dente
(still firm when you bite into it)
2. Meanwhile finely chop the onion and garlic.
3. Once water is boiling add a good pinch of salt to the water, and add pasta.
4. In a medium sized pan add 4 tbsp of Olive Oil, it should cover the bottom of the pan easily.
5. Once hot add onion and garlic
6. Fry up the onions and garlic for 1-2 minutes stirring often.
7. Once the onion are softening up add in the tomato puree (Passata)
8. Add good pinch of salt and grind of pepper, stir in.(If you want the sauce spicy then add in chilli flakes to required heat). Cover with lid and simmer on a low heat.
9. Once pasta is almost ready give sauce a stir, it should have thickened up but still juicy. Turn it off and leave covered.
10. When pasta is cooked, take off the heat and drain.
11. Add pasta into sauce and stir well.
12. Turn the heat back on to simmer gently the pasta and sauce, stirring continuously for about 30-60 seconds. This allows the pasta to take the flavour from the sauce.
13. Serve up and enjoy hot!

Add chilli for extra spice
This recipe is so simple yet so delicious
Great for people on a budget
To make it a healthier recipe then swap the white pasta for whole wheat pasta.
