Recipe for a pan 18×13 inch or 46x33cm
POULICHE
140 gr bread or all purpose flour
140 gr cold water
1/8 spoon yeast
Mix together. Let it sit for 12 hr in room temperature
DOUGH
335 gr water
485 gr bread or all purpose flour rest of the yeast pack
15 gr sea-salt or table salt
50 gr olive oil
Mix the first 5 ingredients with a paddle to a smooth dough, add oil and incorporate the oil in the dough put it in the bowl , cover and let it sit for an hour
After an hour fold the dough gently and cover it again for an hour
After an hour oil the baking pan flip the dough in the middle and stretch the dough gently to the pan size let the dough rest for about 30 minutes for it to rise.
Preheat the oven at 440*F
Bake it for about 20 minutes.
Cool it down, cut it in pieces and do whatever you want with it. Sandwiches, bread sticks and more
