This video teaches beginners how to whip up a quick, simple but rich and creamy risotto within minutes. Risotto is a hearty meal that fills you up and by following this simple recipe, you will be able to make this dish without trouble! Simply follow the instructions listed below to cook a nice creamy risotto at home.
Serves 2 people.
Ingredients:
1 cup Arborio rice (can be substituted with Carnaroli rice, easily available at the supermarket)
8-10 mushrooms (peeled, washed and chopped)
Half onion diced
4-5 Garlic cloves minced
Olive oil
Salt and pepper to taste
Half tbsp Oregano
2 tbsp Parmesan cheese
4 cups Vegetable broth
4 tbsp butter
3/4 cup of water
Instructions:
-Peel and wash mushrooms. Slice finely, then chop roughly to break into smaller pieces.
-Heat olive oil in pot, and fry mushrooms on medium-high heat until golden brown. Add salt, pepper and oregano. Remove and set aside.
-In the same pot, saute the onions and garlic on low-medium heat. Cover and allow onions to sweat until transparent.
-After 2 minutes, take lid off and add the rice.
-Stir rice, and add first cup of vegetable broth. Cook until dry. Then, add second cup of broth. Keep stirring and add third cup of broth.
-Add fourth cup of broth and stir again. Add some water and allow to simmer.
-Remove lid and stir continuously. Add butter and cooked mushroom. Add Parmesan cheese and mix well.
-Season with salt and pepper. Turn heat off.
