I’m back and I have a much more informal video recipe for you guys showing you just how I cook at home. I used smoked salmon in this delicious recipe simply because it’s convenient and also tasty, but you can use chicken, prawns or leave it out completely for a vegetarian option. For a lighter sauce, use low fat cream cheese.. make it your own! The recipe is below. Enjoy ❤️

Serves 4. You will need:
400g pasta
200g smoked salmon/prawns/chicken breast
250g asparagus
Large handful of frozen peas
300ml cream OR (low fat) cream cheese
1 tbsp olive oil
1 tbsp chopped garlic
½ onion, chopped
1 tsp onion powder
1 tsp garlic powder
½ tsp Italian dried herbs
1 tsp black pepper
1 tbsp parmesan cheese (optional)
Salt, to taste

1. Prepare asparagus by snapping off the woody ends, and chopping in to 1cm long pieces.
2. Prepare salmon by chopping in to small pieces.
3. Fry onion on medium heat till translucent, before adding in chopped garlic. Fry for another minute.
4. Add onion powder, garlic powder, salt, pepper and dried herbs. Mix and fry for a couple of minutes until they smell fragrant.
5. Add asparagus, mix and cook for 4 mins or until the pieces start to become tender. Add in salmon and continue cooking until the salmon turns opaque (2-3 mins). Add the peas and warm through for a few minutes (3-4 mins). When the peas are warm, the asparagus should be cooked and tender but still crisp.
6. Add cream (or cream cheese), heat on low heat for a couple of minutes until the flavours infuse, and test/adjust seasoning. The sauce is now ready so switch the heat off.
7. Boil the pasta until al dente, and once cooked, transfer to the sauce along with ½ cup of pasta water to thicken the sauce.
8. Mix thoroughly, add parmesan and taste again for seasoning. Adjust to your liking and serve immediately.
