Pollo alla Cacciatora(chicken hunter style):

Ingredients:
– 4 chicken thighs and 3 large wings(or you can use an entire 2 – 3 lb frying chicken cut into pieces)
– 1/2 cup all-purpose flower
– Olive oil
– 2 garlic cloves(chopped)
– 1 medium onion(chopped)
– 5 to 6 small red potatoes cut into fry size pieces
– 1 red or orange bell pepper(sliced(1/2 inch wide)
– 3 cups mixed mushrooms( I used wild and baby portabello) cleaned stems chopped)
– Frozen green peas(1 cup)
– 2 cups canned crushed Italian style tomatoes or whole tomatoes(crush with your hands
– 1 cup Dry white Wine
– 1/2 cup to a cup of chicken broth
– Salt and pepper
– 1 bay leaf
– 1 tsp dried thyme
– Fresh Parsley

Cook chicken and garlic in oil until brown on each side over medium heat. Set aside. Sauté other vegetables(except mushrooms, cook separately and set aside), until onions are translucent then add chicken back in and add wine. Reduce by half, then add in broth and tomato sauce/pulp. Add in salt, pepper, bay leaf and thyme and stir. Close lid and cook on a simmer for about 30 mins. Open lid and add in mushrooms and then let cook for another 15-20 mins. Season with salt and pepper again and serve over Polenta. I cut recipe in half in the video, but this serves 4!
