Tony’s Un-Kabobs, Alfresco – Grilling Outdoors (Yes, on his Alfresco Grill)…
Since the Corona Virus situation forced restaurants and bars, in Maryland, to close their indoor dining, my personal chef, Tony Villari, prepared one of my favorite meals yesterday, alfresco!
I call this dinner “Tony’s Un-Kabobs”, since it is made with all of the traditional shish-kabob ingredients, however, they are not skewered, rather cooked in grilling pans and cast iron on the grill. The New York strip was also cooked as steaks rather than cut up and skewered, like with traditional kabobs. It is just easier this way.
I am happily the sous-chef, and my duties included cleaning, cutting and preparing a variety of vegetables, including red and sweet onions, colorful bell peppers, mushrooms and zucchini as well as the brushing mixture made of extra virgin olive oil, Italian seasonings, a pinch of garlic, salt and pepper.
I do know my limits with cooking or getting near Tony’s beloved grill. One major limitation is that I do not mess with any preparations or grilling of the steak – i leave that responsibility 100% to the grill master.
I am also just not a good cook, beyond anything that is a “one pot meal” or salad – I have happily passed along my tongs and knives to Tony, years ago – he just does a much better job at cooking and I think he actually enjoys it!
Well, as you see the delicious vegetables and steak cook on the grill, I have to tell you that my meal was awesome! I think Tony does a great job and I will definitely have him to do this again!
