In 2021, vegan restaurateur Ravi DeRossi and wine director Drew Brady opened Soda Club in New York City. And it turns out, the combination of fresh handmade pasta and natural wine was a winning formula. Amid a challenging economic climate that has seen multiple vegan restaurant closures across the US, DeRossi is now opening a new Soda Club. This time in his hometown of Denver, CO.
Soda Club isn’t just a commercial success; it’s a critical one, too. In fact, every year since opening, it has received Michelin’s prestigious Bib Gourmand distinction, which recognizes restaurants that offer high-quality food at a good value.
With its fresh pasta, Roman-style pizzas (known as pinsa), and rotating plant-based specials, like pan-seared potato gnocchi and porcini bolognese, Soda Club fits the bill. According to Michelin, the restaurant offers “smart cooking that celebrates vegetables with creativity and class.”

According to DeRossi, the new Soda Club will build on this already stellar reputation with a refreshed identity and a uniquely Denver twist.
“Soda Club Denver is a love letter to my home state of Colorado,” Derossi said in a statement. “Drew and I stayed true to our vision of a relaxed, convivial neighborhood gathering space where guests can enjoy shared bottles and an approachable but adventurous menu, while creating something that feels specific to Denver and the RiNo neighborhood.”

Diners can still expect the creative, Mediterranean and Middle Eastern-inspired plant-based cooking that defines Soda Club, though. The Denver location keeps several New York favorites while introducing dishes designed to reflect its new surroundings. Guests can enjoy them inside an intimate, velvet-clad space in The Ramble Hotel on 25th Street.
“We kept many of the Soda Club classics that our guests love in New York City while tailoring the menu entirely to Denver’s energy, seasons, and landscape,” added Soda Club chef Amira Gharib. “Soda Club has a sense of comfort and neighborhood hospitality with an undercurrent of culinary thought and fine-dining technique backing up every single plate and a twist on classics that keeps every bite exciting.”
The opening is part of a strategic shift for DeRossi’s hospitality group, Overthrow Hospitality. Back in July, he revealed that Ladybird, an upscale vegan restaurant and cocktail bar in the East Village, would be closing to allow the company to devote more time and resources to Soda Club Denver.
The new location is now open seven nights a week, from 5pm to 11pm Sunday through Thursday and until midnight on Fridays and Saturdays. Make your reservation here.
