It was such a pleasure to serve this salad to our friends for dinner, they complemented it during dinner several times. And to think how easy it is to make.
Here is what you need-
4 large porcini mushrooms or 1 lb. portabela mushrooms
3 cups arugula or other greens such as spinach
1/2 cup olive oil
Zest and juice of one lemon
1/2 tsp each salt and pepper
6-8 oz parmigiana cheese
To make-
Rinse wel the mushrooms and the greens
Place mushrooms on a baking pan, drizzle 1 Tbsp olive oil
Place in oven, broil for 8 minutes
Set aside
Place olive oil in pan, add lemon zest, salt, pepper and lemon juice
Cook on medium 2-3 minutes
Add greens, one batch at a time, toss for 8 minutes
Place some greens on a salad plate, add 2-3 mushrooms
Drizzle shaved parmigiana cheese and serve.
