Ingredients:
3 eggs (medium size)
1 lemon (zest only)
200 gr of sugar
250 gr of ricotta
100 ml of peanut oil
Juice of 1 big lemon
150 gr of milk
200 great of plain flour
65 gr of potato starch
1 tb sp of baking powder
Icing sugar
Procedure
In a bowl I place the eggs, the zest and the sugar, I beat with the electric mixer until I get a clear and smooth mixture.
I add the ricotta cheese and the oil little by little, then the lemon juice and the milk, I also add the flour, the potato starch and I mix everything to get a homogeneous mixture.
I pour it in a 24 cm, oiled and floured donut cake mold. I let it bake in preheated oven at 180 degrees for about 40 minutes. I let it cool and when it’s ready I cover it with icing sugar.
