Ingredients for 3 people:
300g/1.3 cups of 00 flower
3 free-range eggs
Instructions:
1. gently pour flour onto a working surface.
2. crack and add the eggs at the center of the “fontana”. Using a fork now we start mixing the eggs with the flour.
3. manipulate the dough until firm. If the dough is too moist add some extra flower.
4. let it rest at room temperature or in the fridge for 20 minutes.
5. flatten the dough with a rolling pin.
6. start working the pasta dough using the machine going through each step until you reach the desired thickness. Ideally reaching the thinnest setting on the pasta machine.
7. use the slice tool on the pasta machine, in order to make this great homemade tagliatelle.
